Baked Green Eggs

Nothing is more seductive than lashings of butter and when combined with leeks it’s a match made in heaven. Add some Salsa Verde for some acidity to cut through the richness (see salsa verde recipe).

INGREDIENTS

  • 2 tbs butter
  • ½ leek – chopped
  • Handful of Brussels – trimmed and halved
  • 1 long red chilli – deseeded and chopped
  • 2-4 happy eggs
  • Handful of parsley – chopped
  • Sea salt
  • Black pepper

METHOD

  • Heat the butter on a low heat and add the chilli and Brussels and cook for 1 minute
  • Add the leeks and combine with the Brussels and chilli
  • Cook for 5-6mins turning occasionally
  • Make a depression in the veggies and crack the eggs in
  • Cook for a further 5-6 minutes or until the eggs are cooked to your liking
  • Remove from the heat
  • Add the parsley and season
